Instructions

  1. Preheat the oven: Begin by preheating your oven to 275°C (527°F) and let it heat for 15 minutes.

  2. Beat the butter: In a mixing bowl, beat the salted butter until it becomes smooth and slightly pale in color. This should take about 2-3 minutes.

  3. Add sesame seeds: Once the butter is ready, add the sesame seeds (til seeds) to the mixture and stir well to combine.

  4. Sift dry ingredients: In a separate bowl, sift together the Vivatta Maida (flour), baking powder, and a pinch of salt. Gradually add this sifted mixture to the butter and sesame seed mixture, mixing it in batches. Keep mixing until a soft dough forms.

  5. Form the dough: The dough should be smooth and not sticky to the touch. It should also hold together without cracking when shaped into balls. Depending on the type of flour, you may need slightly more or less flour, so adjust accordingly.

  6. Prepare the filling (optional): If you wish to add a filling, take a small ball of dough and flatten it slightly using your palms. Place a pea-sized amount of your desired filling (such as date paste or other fillings) in the center. Then, fold the edges of the dough around the filling and shape it back into a ball. This is similar to making a kachori.

  7. Shape the cookies: On a baking sheet, place small balls of dough. Do not flatten them as they bake—they should retain their round shape.

  8. Bake the cookies: Bake the cookies in the preheated oven at 200°C (392°F) for about 30 minutes. Keep a close eye on them as they bake. The goal is to have them lightly golden brown on the bottom, with no browning on the top. This will ensure the cookies maintain their delicate, melt-in-your-mouth texture.

  9. Cool down: Once the cookies are baked, remove them from the oven and let them cool down slightly on the baking sheet. Be cautious when handling the cookies at this point, as they are soft and fragile.

  10. Coat with powdered sugar: Once the cookies have cooled down but are still slightly warm, use a fine sieve to sprinkle powdered sugar generously over them. Avoid dipping the cookies directly into the sugar, as they are very delicate and may break. The sugar will start to melt slightly as it settles on the cookies.

  11. Second round of sugar: After the initial sugar coating has settled and melted, do a second round of sprinkling powdered sugar, ensuring a thorough and generous coating. Since the dough contains no sugar, the powdered sugar provides the necessary sweetness and enhances the flavor.

  12. Storage and serving: Allow the cookies to cool completely, then store them in an airtight container to maintain their freshness. Serve Snow Drop Cookies alongside a cup of espresso or as a delightful treat during tea time. They also make for an excellent snack box addition for kids. Enjoy the melt-in-your-mouth goodness!

Pro Tip: These cookies are incredibly delicate, so be gentle while handling them, especially during the coating process. The extra sugar coating adds an irresistible touch, making them even more indulgent.
