1 can Garbanzo beans
1 can Corn
1 can Hominy
1 cup Salsa
1 stalk Celery
4-6 Bell peppers
2 Sweet onions
2 Green onions
To taste Cilantro
1 clove Garlic
1 tsp Cumin
3-4 tsp Chili powder
2 tsp Celery seed
2 tsp Paprika
1-2 Limes

Instructions:

  1. Begin by opening the can of salsa and chili hot beans, pouring them into a saucepan, and draining the other canned vegetables.

  2. Mince the garlic and add it to the mix in the saucepan, along with the drained black beans, garbanzo beans, corn, and hominy.

  3. Place the saucepan over low heat and allow it to simmer uncovered. Occasionally stir gently while you prepare the remaining ingredients.

  4. While the mixture simmers, chop the celery, sweet onions, and bell peppers.

  5. Once the mixture reaches a gentle simmer, add the chopped vegetables, ensuring they do not overcook.

  6. Squeeze the limes and chop the cilantro and green onions.
