Classic Caesar Salad ๐Ÿฅ—

Love this stuff. Sometimes we add seasoned cooked chicken breast for a 1 dish meal. Did you know that this salad was “invented” in Tijuana, Mexico?

Ingredients:

Quantity Ingredient
1 Salt
2 Garlic cloves
1 Dijon mustard
1 Worcestershire sauce
1 Anchovy paste
2 Fresh lemon juice
1 Canola oil
1/3 Romaine lettuce
1 Parmesan cheese
4 Toasted bread cubes

Instructions:

  1. In a large wooden or glass bowl, mash the garlic into the salt until smooth.
  2. Add the Dijon mustard, Worcestershire sauce, and anchovy paste. Whisk well.
  3. Add the lemon juice and whisk well.
  4. Add the egg yolk (some use the whole egg) and whisk well.
  5. Add the oil in a slow, steady stream while whisking like mad.
  6. Keep whisking until the dressing is smooth and creamy looking.
  7. Add the romaine and toasted bread cubes and toss well.
  8. Add the Parmesan cheese and toss well again.
  9. Serve right away.
