Mini Mexican Quiches Recipe 🧀🌶️

Preparation Time: 20 minutes
Cooking Time: 18 minutes
Total Time: 38 minutes
Yield: 22 mini quiches

Description:

Impressive little appetizers perfect for dinner parties, especially those with a Mexican theme. You can adjust the heat by using mild green chilies or jalapenos. Easy preparation if you buy the already made pie crusts, then the rest is just combining ingredients.

Ingredients:

  • 1/2 chorizo sausage
  • 2 cups cheddar cheese, shredded
  • 2 cups mozzarella cheese, shredded
  • 1/2 green chili pepper, finely chopped
  • 6 eggs
  • 1/4 cup salsa
  • 2 pre-made pie crusts

Instructions:

Step Description
1 Heat oven to 425 degrees.
2 Set aside an ungreased muffin pan.
3 Brown and drain sausage in medium skillet and set aside.
4 In a medium bowl, combine cheddar cheese, mozzarella cheese, and green chilies. Stir in sausage.
5 In a separate bowl, beat eggs well and stir in salsa. Do not combine mixtures.
6 Roll out pie crusts to a 12-inch round and use a biscuit cutter (3 1/2 inches) to cut out circles. You should have 22 rounds.
7 Press each round into a muffin cup to form a crust.
8 Spoon 1 heaping tablespoon of cheese and chili mixture into each crust-lined cup.
9 Top with egg mixture (about 1 tablespoon) and divide evenly among cups.
10 Bake at 425 degrees for 14-18 minutes until filling is set.
