Ingredients:

  • 2 3/4 – 3 cups flour
  • 3 – 4 tablespoons shortening
  • 1 teaspoon salt
  • 3/4 cup hot water
  • 3 tomatoes
  • 2 onions
  • 1 garlic clove
  • 1/4 teaspoon black pepper
  • 3/4 teaspoon ground cinnamon
  • 3/4 teaspoon ground cloves
  • 1 tablespoon dark raisins
  • 1 tablespoon cider vinegar
  • 1/8 teaspoon salt
  • 1/4 cup sliced almonds
  • 4 tablespoons oil

Instructions:

For the Dough:
  1. In a large bowl, add flour and cut in the lard or shortening until it resembles small pea-sized crumbs.
  2. Dissolve the salt in hot water and incorporate it into the flour mixture.
  3. Knead the dough for several minutes until it becomes smooth and elastic.
  4. Divide the dough into 6 large balls or 12 smaller balls and place them on a plate. Cover with plastic wrap and let them rest at room temperature for 30 minutes.
For the Filling:
  1. Puree the tomatoes in a food processor until smooth, adding 1/3 cup of water as needed.
  2. Heat oil in a large skillet over medium heat.
  3. Add chopped onions and cook until soft, about 4-5 minutes.
  4. Stir in minced garlic and cook for an additional 2 minutes.
  5. Add the pork to the skillet and cook until browned and fully cooked. Drain any excess fat.
  6. Stir in the pureed tomatoes, black pepper, ground cinnamon, ground cloves, dark raisins, and cider vinegar.
  7. Cook the mixture for 30 minutes, allowing the flavors to meld together.
  8. Toast the sliced almonds in a separate pan until lightly browned, then stir them into the filling. Adjust seasoning with salt, to taste.
  9. Remove the skillet from heat and let the filling cool slightly.
Assembly:
  1. Preheat your oven to 375°F (190°C).
  2. Roll out each ball of dough into a thin round circle.
  3. Spoon an equal amount of the pork filling onto one half of each dough circle, leaving space around the edges.
  4. Fold the dough over the filling to create a half-moon shape.
  5. Use a fork or your fingers to crimp the edges firmly, sealing the empanadas shut.
  6. Place the assembled empanadas onto a lightly greased baking sheet.
  7. Bake in the preheated oven for approximately 20 minutes, or until the crust is golden brown.
  8. Alternatively, you can fry the empanadas in hot oil until golden brown on both sides, about 3 minutes per side.
  9. Once cooked, remove the empanadas from the oven or skillet and let them cool slightly before serving.
