Instructions

  1. Prepare the Ricotta Filling:
    Begin by sieving the ricotta cheese through a fine-mesh colander set over a bowl. This will help achieve a smooth consistency for the filling. Once the ricotta is ready, add the powdered sugar and mix it thoroughly until well combined.

  2. Flavor the Filling:
    Split the vanilla bean lengthwise and scrape out the seeds with a knife. Add the vanilla seeds to the ricotta mixture, giving it a rich and aromatic flavor.

  3. Assemble the Strudels:
    Place the puff pastry discs on a clean surface. Spoon a teaspoon of the ricotta mixture onto the center of each pastry disc. Scatter a few mixed berries on top of the ricotta.

  4. Seal and Shape the Strudels:
    Lightly brush the edges of the pastry with the beaten egg. Fold in the sides of the pastry (around 10-11 o’clock and 2-3 o’clock), and then carefully roll it into a little bundle, securing the edges.
