Mini Hazelnut Caprese Cakes with Raspberries and Candied Orange

Ingredients:

Dark chocolate 130g
Egg yolks 80g
Egg whites 140g
Butter (softened) 130g
Powdered sugar 150g
Potato starch 25g
Unsweetened cocoa powder 15g
Baking powder 4g

Fresh raspberries 12
Candied orange peel 6 strips
Powdered sugar (for decoration) To taste

Instructions:

  1. Prepare the chocolate and hazelnuts:

    • Grate the dark chocolate and set it aside.
    • Place the hazelnuts into a food processor and pulse until finely ground.
  2. Make the base mixture:

    • In a mixing bowl, combine the softened butter (cut into cubes) with half of the powdered sugar.
    • Add a pinch of salt and the egg yolks, and whisk until the mixture is smooth and well-combined.
    • Stir in the ground hazelnuts, followed by the grated chocolate, mixing until the ingredients are fully incorporated.
    • Sift the cocoa powder, potato starch, and baking powder into the bowl. Stir gently with a spatula until you have a smooth batter.
  3. Prepare the meringue:

    • In a separate bowl, beat the egg whites with the remaining powdered sugar using electric beaters. Whisk until stiff peaks form.
  4. Combine the mixtures:

    • Gently fold the meringue into the chocolate-hazelnut batter. Add the egg whites little by little, using a spatula and folding from the bottom upwards until the mixture is smooth and homogenous.
  5. Prepare the baking tins:

    • Grease six 10 cm (4-inch) diameter mini cake tins with butter. Divide the batter evenly among the tins, filling them up.
  6. Bake the mini cakes:

    • Preheat your oven to 180°C (350°F) and bake the cakes for about 20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Decorate and serve:

    • Once the cakes are baked, remove them from the oven and allow them to cool slightly.
    • Dust the mini caprese cakes with powdered sugar, and decorate with fresh raspberries and candied orange peel strips.
