Mini Hazelnut Caprese Cakes with Raspberries and Candied Orange

Instructions:

Prepare the chocolate and hazelnuts:

- In a mixing bowl, combine the softened butter (cut into cubes) with half of the powdered sugar.
- Add a pinch of salt and the egg yolks, and whisk until the mixture is smooth and well-combined.
- Stir in the ground hazelnuts, followed by the grated chocolate, mixing until the ingredients are fully incorporated.
- Sift the cocoa powder, potato starch, and baking powder into the bowl. Stir gently with a spatula until you have a smooth batter.

Prepare the meringue:
- In a separate bowl, beat the egg whites with the remaining powdered sugar using electric beaters. Whisk until stiff peaks form.

Combine the mixtures:
- Gently fold the meringue into the chocolate-hazelnut batter. Add the egg whites little by little, using a spatula and folding from the bottom upwards until the mixture is smooth and homogenous.

- Grease six 10 cm (4-inch) diameter mini cake tins with butter. Divide the batter evenly among the tins, filling them up.
