Instructions:

  1. Prepare the Base: In a large saucepan, combine the sugar and gelatin.

  2. Add Evaporated Milk: Stir in the evaporated milk until well combined.

  3. Heat and Dissolve: Cook the mixture over medium heat, stirring continuously, until the sugar and gelatin dissolve, and the mixture is nearly boiling.

  4. Combine with Eggs: In a small bowl, lightly beat the egg. Gradually stir about half a cup of the hot gelatin mixture into the beaten egg, then pour the egg mixture back into the saucepan.

  5. Thicken: Cook the mixture over low heat for an additional 2 minutes, stirring constantly. Ensure it doesn’t boil.

  6. Add Flavorings: Stir in the skim milk, white creme de menthe or mint extract, and vanilla extract. Cover the mixture and refrigerate for 1 hour.

  7. Smooth Texture: If the mixture isn’t smooth after refrigeration, strain it to remove any lumps.

  8. Optional Coloring: If desired, add a few drops of green food coloring to give the ice cream a vibrant mint hue.
