Chocolate Mint Pinwheels Recipe

Ingredients:

  • 1 1/2 eggs 🥚
  • 1 cup butter, softened 🧈
  • 3/4 cup sugar 🍚
  • 1 teaspoon vanilla extract 🌰
  • 1/3 teaspoon salt 🧂
  • 1/2 cup plain flour 🍪
  • 2 1/4 cups mint-chocolate chips 🍫🌿

Instructions:

  1. Prepare the Mint-Chocolate Mixture:

    • Melt 1/2 cup of mint-chocolate chips over hot (not boiling) water until smooth. Set aside and allow it to cool to room temperature.
  2. Prepare the Cookie Dough:

    • In a large bowl, combine softened butter and sugar. Beat until creamy.
    • Add the egg and vanilla extract, blending well.
    • Gradually beat in the flour and salt until a smooth dough forms.
  3. Create the Mint-Chocolate Swirl:

    • Take 1 cup of the prepared dough and place it in a small bowl.
    • Add the melted mint-chocolate mixture, blending thoroughly.
    • Shape the mixture into a ball, flatten it (the mixture may appear curdled), and cover it with plastic wrap.
    • Do the same with the remaining plain dough.
  4. Chill the Dough:

    • Chill both dough portions until firm, approximately 1 1/2 hours.
  5. Preheat and Roll:

    • Preheat the oven to 375 degrees F.
    • Between sheets of waxed paper, roll each ball of dough into a 13 x 9-inch rectangle.
  6. Create the Pinwheel:

    • Remove the top layers of waxed paper from both doughs.
    • Invert the chocolate dough onto the plain dough and peel off the waxed paper.
    • Starting from the long side, carefully roll up the dough jelly roll style.
  7. Slice and Bake:

    • Cut the rolled dough into 1/4-inch slices and place them on an ungreased cookie sheet.
    • Bake at 375 degrees F. for 7 to 8 minutes or until the edges are lightly golden.
    • Cool the cookies completely on wire racks.
  8. Chocolate Coating:

    • Melt the remaining 1 cup of mint-chocolate chips over hot (not boiling) water until smooth.
    • Spread 1/2 slightly rounded teaspoonful of melted chocolate on the flat side of each cookie.
  9. Chill and Enjoy:

    • Chill the cookies until the chocolate is set, and then, savor the irresistible blend of chocolate and mint in every bite.
