Instructions

  1. Prep the Ingredients:
    Begin by preparing all the ingredients for the Mint Flavored Mixed Vegetable Pulao. Chop the carrots, green beans, and onion. If you are using fresh mint leaves, chop them as well. If you’re using dried mint, crush the leaves between your palms and set them aside. Don’t forget to chop the coriander leaves too!

  2. Soak and Cook the Basmati Rice:
    Rinse the basmati rice thoroughly and soak it in water for about 20 minutes. After soaking, cook the rice in a pressure cooker. Add enough water to cook the rice and cook it for 2 whistles. Allow the pressure to release naturally. Once done, fluff the rice gently and set it aside.

    Add the chopped green chilies, carrots, green beans, and peas to the pan. Stir and sauté the vegetables for about 2 minutes. The vegetables should be tender yet crisp.

  6. Add Mint and Rice:
    If you’re using fresh mint leaves, add them to the pan now. Sauté the mint until it wilts slightly, which will enhance its aroma. Add the cooked basmati rice to the pan and gently mix it with the vegetables, making sure not to break the rice grains.

  7. Season the Pulao:
    If using dried mint leaves, sprinkle them over the rice and vegetables. Stir well to ensure the mint coats the rice evenly. Make sure the flame is kept high while tossing the rice and vegetables together for a couple of minutes.

  8. Final Touches:
