Instructions

  1. Roasting the Semolina:
To begin with the preparation of the Pudina Sooji & Oats Dhokla, take a sturdy wok or a kadai and place it over medium heat. Add the semolina (sooji) and dry roast it for approximately 3 to 4 minutes. You should aim for a slightly roasted aroma while ensuring that the semolina does not brown. Once roasted to perfection, transfer the semolina to a large mixing bowl and set it aside to cool slightly.

  2. Mixing the Ingredients:
In the same large mixing bowl containing the roasted semolina, incorporate the rolled oats, finely chopped mint leaves, grated ginger, asafoetida, salt, and the tablespoon of sunflower oil. Pour in the curd and mix thoroughly. Gradually add water, a little at a time, stirring continuously to form a thick batter with a consistency similar to that of cake batter—aiming for about 2.5 cups of liquid in total. Taste the batter and adjust the salt as per your preference.

  3. Resting the Batter:
Allow the batter to rest for about 10 minutes. This resting period is crucial as it lets the oats absorb moisture and swell, leading to a softer texture once steamed.

  4. Preparing for Steaming:
After the resting time, gently fold in the Enos fruit salt into the batter. The fruit salt is key to achieving the desired fluffiness of the Dhokla. Mix vigorously to ensure it is evenly distributed throughout the batter.

  5. Steaming the Dhokla:
Preheat a steamer with water on medium-high heat. While waiting, grease the Dhokla plates (or any suitable steaming tray) with a little sunflower oil to prevent sticking. Carefully pour the Pudina Sooji & Oats Dhokla batter into the plates, filling them only up to 3/4 of their capacity to allow room for rising. For an added touch of flavor, sprinkle a light dusting of red chili powder over the batter.

  6. Cooking the Dhokla:
Place the filled Dhokla plates in the preheated steamer, ensuring the water is boiling. Steam on high for about 10 minutes. After the steaming time is complete, turn off the heat, and allow the Dhokla to sit in the steamer for an additional 5 minutes before removing them. This helps to set the texture.

  7. Seasoning the Dhokla:
While the Dhokla is cooling slightly, prepare the seasoning. In a tadka (tempering) pan, heat a teaspoon of sunflower oil. Add the mustard seeds and let them crackle, then incorporate the sesame seeds and curry leaves, stirring briefly to release their aroma. Once they are fragrant, turn off the heat.

  8. Serving the Dhokla:
Carefully remove the Dhokla from the plates and cut them into desired shapes—squares or diamonds work beautifully. Drizzle the prepared seasoning over the Dhokla, allowing the oil and spices to enhance the flavors. Serve the Pudina Sooji & Oats Dhokla hot or warm, accompanied by a vibrant green chutney for a perfect breakfast or snack option.
