Description:
Wonderful for gifts or just to store up and have extra breads and desserts around the house. These are neat little breads baked right in a pint size jar. When sealed they last up to 6 months. If you like this, I am posting many more types–look for them.
Ingredients:
- 2/3 cup shortening
- 2 2/3 cups sugar
- 4 eggs
- 2 teaspoons baking soda
- 1 1/2 teaspoons salt
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 2/3 cup water
- 3 1/2 cups flour
- 2/3 cup pecans
- 2/3 cup walnuts
Instructions:

Prepare the Batter:
- Cream the shortening and the sugar together in a mixing bowl until well combined.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the baking soda, salt, baking powder, cinnamon, and cloves until evenly distributed.
- Alternately add the water and flour to the mixture, stirring well after each addition.
- Fold in the chopped pecans and walnuts until evenly distributed throughout the batter.

Prepare the Jars:
- Grease 8 pint-size wide-mouth jars with melted shortening, ensuring the sides are well coated.
- Fill each jar halfway with the prepared batter, then wipe the rims clean with a damp cloth.

Baking:
- Preheat the oven to 325°F (165°C) and place a cookie sheet on the middle rack to provide even heat distribution.
- Arrange the filled jars on the cookie sheet and bake for 35 to 45 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

Sealing the Jars:
- While the cakes are baking, bring a large pot of water to a boil. Once boiling, turn off the heat.
- Place the jar lids and rings in the hot water and let them sit for at least 10 minutes to sterilize.

Finishing Touches:
- Once the cakes are done, remove the jars from the oven one at a time.
- Wipe the rims clean again and place a lid on each jar. No need to wipe off excess moisture.
- Screw the lids on tightly and allow the jars to cool completely on the counter. The lids will seal as they cool.

Storage and Presentation:
- Store the sealed jars in a cool, dry place for up to 6 months.
- If giving as a gift, cover the lid with a pretty fabric and attach a card with the cake name, date made, and expiration date.
- Alternatively, simply write the information on the lid with a marker if not intended as a gift.

Serving and Enjoyment:
- When ready to enjoy, if the cake does not come out easily, run the jar under hot water for a few seconds or microwave it with the lid removed for 2 seconds.
