Category: Desserts
Servings: 8

Ingredients:

Ingredient Quantity
Carrots 380g
All-purpose flour (Type 0) 250g
Sugar 140g
Potato starch (Cornstarch) 50g
Sunflower seed oil 80g
Orange juice 60g
Water 60g
Baking powder 10g
Butter (for greasing) As needed
All-purpose flour (for dusting) As needed
Powdered sugar As needed

Instructions:

  1. Prepare the Carrots: Start by peeling the carrots and cutting them into chunks. Place them into a food processor and blend until they turn into small shreds, resembling grated carrot.

  2. Mix Wet Ingredients: In a large bowl, pour in the water and freshly squeezed orange juice. Whisk them together until well combined.

  3. Add the Dry Ingredients: Gradually mix in the sunflower seed oil, followed by the potato starch and baking powder. Stir well until the mixture forms a smooth batter, free from lumps.

  4. Incorporate the Carrots: Once the wet and dry ingredients are blended, fold in the shredded carrots. Stir gently to ensure the carrots are evenly distributed throughout the batter.

  5. Prepare the Baking Pan: Grease a 22 cm round cake pan with butter and dust it lightly with flour to prevent sticking.

  6. Bake the Cake: Pour the prepared batter into the greased and floured pan. Place it in a preheated oven and bake at 180°C (350°F) for approximately 35-40 minutes, or until a toothpick inserted into the center comes out clean.

  7. Cool and Serve: Once the cake is done, remove it from the oven and let it cool in the pan for about 10 minutes. Then, transfer the cake onto a wire rack to cool completely.

  8. Finish and Enjoy: Once cooled, dust the top with powdered sugar for a sweet finish. Your eggless carrot cake is now ready to be served and enjoyed!

This Eggless Carrot Cake is a light and flavorful treat, perfect for those looking for a vegan-friendly dessert option or those simply wanting to enjoy a classic carrot cake without eggs.
