Total Time: 55 minutes
Ingredients:
Ingredient | Quantity |
---|---|
Pears | 600g |
Dark chocolate (50% cocoa) | 150g |
All-purpose flour | 100g |
Butter | 100g |
Eggs | 180g |
Ground cinnamon | 3g |
Sugar | 130g |
Whole milk | 220g |
Sugar (for glaze) | 40g |
Lemon juice | 30g |
Unsweetened cocoa powder | 20g |
Instructions:
Step 1: Prepare the Pears
Begin by peeling the pears. Once peeled, cut them into wedges and remove the cores. Set aside for later.
Step 2: Prepare the Cake Batter
In a large mixing bowl, add the eggs, sugar, and ground cinnamon. Using an electric hand mixer, beat the mixture until smooth and creamy. Gradually pour in the whole milk while continuing to mix until the ingredients are well incorporated.
Step 3: Melt Butter and Chocolate
In a separate heatproof bowl, melt the butter and dark chocolate together using the double boiler method (bain-marie). Stir occasionally to ensure the chocolate and butter melt evenly without burning.
Step 4: Combine Wet Ingredients
Once the chocolate and butter mixture has melted and cooled slightly, pour it into the egg mixture. Stir gently to combine, ensuring that all ingredients are fully blended.
Step 5: Add Dry Ingredients
Sift the all-purpose flour and unsweetened cocoa powder into the wet ingredients. Gently fold the dry ingredients into the mixture until smooth. Be careful not to overmix, as this could result in a dense cake.
Step 6: Prepare the Baking Pan
Grease a 30 cm round ceramic tart pan with butter to prevent the cake from sticking. Once the pan is prepared, pour the cake batter into it, spreading it evenly across the surface.
Step 7: Bake the Cake
Place the pan in a preheated static oven at 180°C (350°F). Bake for about 25 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Step 8: Make the Lemon Glaze
While the cake is baking, prepare the lemon glaze. In a small bowl, squeeze the juice from a lemon, filtering out any seeds. Add the sugar and stir the mixture until it forms a smooth, creamy consistency.
Step 9: Apply the Glaze
Once the cake has finished baking, remove it from the oven. Pour the lemon glaze over the entire surface of the cake, ensuring it is evenly coated.
Step 10: Grill the Cake
Place the cake back into the oven under the grill function for 5 minutes, allowing the glaze to set and slightly caramelize.
Step 11: Cool and Serve
After the grilling step, remove the cake from the oven and let it cool slightly. Once cooled, slice and serve your delicious moist pear and chocolate cake, perfect for any occasion.
This moist pear and chocolate cake combines the sweetness of ripe pears with the richness of dark chocolate, creating a dessert that is both indulgent and satisfying.
