Oatmeal Molasses Bread II Recipe

Overview:

Wonderful, aromatic bread. Ideal for serving with “plainer” main meals, or for use in bread pudding or french toast. Just let it dry a bit before using it in your recipe.

  • Total Time: 3 hours 33 minutes
  • Prep Time: 40 minutes
  • Cook Time: 2 hours 53 minutes
  • Servings: 2 loaves

Ingredients:

Quantity Ingredient
2 cups Boiling water
1 cup Oatmeal
1 1/2 tbsp Butter
1 pkg Dry yeast
1/2 cup Lukewarm water
1/2 cup Blackstrap molasses
2 tsp Salt
4 1/2 – 5 cups Flour

Instructions:

  1. In a large bowl, pour boiling water over butter and oatmeal. Let stand for 30 minutes.

  2. In a small bowl, sprinkle yeast over lukewarm water and let stand until the yeast dissolves and gets foamy.

  3. In either the large bowl (if doing by hand) or in a mixer bowl, combine the oatmeal, yeast, molasses, and salt.

  4. Mix, adding 1 cup of flour at a time until JUST kneadable. This dough is sticky, do not add too much flour!

  5. Turn onto a floured surface (or add dough hook to machine) and knead about 8 minutes, using as little flour as you can and still knead it.

  6. Form dough into a ball, and place in an oiled bowl. Cover with plastic wrap or a cloth and let rise for 1 1/2 hours.

  7. Punch the dough down and cut into half. Shape into loaves, circles, or any other shape you desire.

  8. Cover again and let rise for 40 minutes.

  9. Preheat oven to 375°F (190°C).

  10. Bake in a preheated oven for 30-35 minutes.

  11. VERY IMPORTANT: When baking in any type of pan, grease them well. This bread will stick in a BIG way if the pans are ungreased.
