Ingredients

For the Noodles:

  • 300 grams egg noodles (mie telor), cooked and drained
  • Chicken oil (refer to recipe below)
  • Sweet soy sauce (kecap manis)
  • Green vegetables (such as bok choy or caisim)
  • Thinly sliced scallions
  • Beef meatballs (optional)
  • Bottled chili sauce
  • Spicy sambal (optional)

For the Spicy Sambal:

  • 5 red curly chilies
  • 10 bird’s eye chilies
  • A pinch of salt
  • Water, as needed

For the Chicken Topping:

  • 250 grams chicken breast, diced
  • 150 grams chicken feet (optional)
  • 4 large garlic cloves, minced
  • 1 medium onion (about 50 grams), chopped
  • 1 tomato, sliced
  • 1 packet chicken bouillon powder
  • Ground black pepper, to taste
  • Ground nutmeg, to taste
  • Sugar, to taste
  • Sweet soy sauce (kecap manis), to taste
  • Water, as needed

Instructions

1. Prepare the Chicken Topping:

  • Begin by cleaning the chicken breast and cutting it into small cubes.
  • Mince the garlic and chop the onion. Sauté the minced garlic in a pan until fragrant, then add the chopped onion and cook until translucent.
  • Add the sliced tomato and diced chicken to the pan. Cook until the chicken releases its natural juices, stirring occasionally.
  • Pour in enough water to cover the chicken. Stir in sweet soy sauce and the chicken bouillon powder. Season with ground black pepper, nutmeg, and sugar to taste.
  • Continue to cook until the sauce has thickened and reduced. Adjust seasoning as needed. Once cooked, set aside.

2. Make the Spicy Sambal:

  • Blend the red curly chilies and bird’s eye chilies with a pinch of salt until smooth. Add a small amount of water to achieve the desired consistency.
  • Cook the blended mixture in a pan over medium heat for about 3 minutes, then remove from heat.

3. Assemble the Dish:

  • In a bowl, mix 1-2 tablespoons of chicken oil with 1-2 tablespoons of sweet soy sauce. Combine this mixture with the cooked egg noodles, ensuring the noodles are well coated.
  • Arrange the cooked vegetables, chicken topping, optional beef meatballs, and sliced scallions on top of the noodles.
  • Drizzle with bottled chili sauce and spicy sambal according to your taste preferences.

4. Serve:
