Instructions

  1. Cook the Mooli (Radish):
    Start by heating 1 teaspoon of oil in a stir-fry pan over medium heat. Add the grated radish to the pan and sprinkle a pinch of salt. Stir and sauté the radish until it softens, releasing its moisture. This should take about 5 minutes. Once softened, remove the pan from the heat and allow the radish to cool completely.

  2. Prepare the Dough:
    In a large mixing bowl, combine the cooled radish, whole wheat flour, chopped green chillies, cumin powder, turmeric powder, coriander leaves, and salt to taste. The radish will release moisture, so you may not need to add much water while kneading the dough. Add a small amount of water, a little at a time, until the dough comes together.

  3. Knead the Dough:
    Begin kneading the ingredients into a smooth and soft dough. Once the dough is formed, add a teaspoon of oil and knead it again. This helps to make the dough non-sticky and easy to work with. Knead for 3 to 4 minutes to ensure it is well combined.

  4. Shape the Dough:
    Preheat your iron skillet or tawa over medium heat. Divide the dough into 15 equal portions. Roll each portion into a ball, then flatten it with the palm of your hand. Dust the flattened dough ball with some dry flour and roll it out into a thin circle, approximately 6 inches in diameter.

  5. Cook the Parathas:
    Once the dough is rolled out, place it onto the preheated skillet. Cook for about 1-2 minutes on each side until you see small golden brown spots. Flip the paratha, apply a small amount of oil, and cook the other side, pressing gently with a spatula to ensure even cooking. Repeat with the remaining dough portions.

  6. Serve:
    Once all the parathas are cooked, serve them hot with your favorite side dishes like yogurt, pickles, or curry.
