Ingredients:
- 1/4 cup Rice
- 1/4 cup Yellow Moong Dal (Split)
- 1 Carrot (Gajjar), finely chopped
- 3 Green Beans (French Beans), finely chopped
- 1 teaspoon Ghee
- 1/4 teaspoon Cumin Seeds (Jeera)
- 1/4 teaspoon Asafoetida (Hing)
- A pinch of Salt

Instructions:
- In a pressure cooker, add the yellow moong dal and rice, along with 1 cup of water. Pressure cook for 3 whistles. Afterward, reduce the flame to low and let it simmer for 2 more minutes. Turn off the heat and allow the pressure to release naturally.
- Meanwhile, in another pressure cooker, add the chopped carrots and green beans, along with 2 tablespoons of water. Pressure cook for 2 whistles. Turn off the heat, and immediately release the pressure by running the cooker under cold water to preserve the color and nutrients of the vegetables.
- Heat a kadai on low heat, then add the ghee. Once it melts, add cumin seeds and let them crackle. Add the asafoetida and stir well into the ghee.
- Add the cooked vegetables, dal, and rice mixture to the kadai. Sprinkle a pinch of salt and stir well to combine. Continue stirring until the khichdi reaches a smooth consistency.
- Turn off the heat. The Moong Dal Khichdi is ready to serve.
