Moong Dal Ladoo

- 1 cup Yellow Moong Dal (Split)
- 1 cup Caster Sugar
- 1/3 cup Ghee
- 1 teaspoon Cardamom Powder (Elaichi)
- Cashew nuts (for garnish, as required)
- Whole Almonds (Badam, for garnish, as required)
- Pistachios (for garnish, as required)

Roast the Moong Dal: Heat a large kadai (pan) on low to medium heat. Dry roast the moong dal for 10 minutes, stirring occasionally, until the dal turns slightly golden and emits a pleasant aroma. Once done, remove from heat and allow the dal to cool to room temperature.

Grind the Dal and Sugar: Once cooled, grind the roasted moong dal and caster sugar separately in a blender until they form fine powders. (If using caster sugar, there’s no need to grind it.) Sift both the dal and sugar powders to remove any coarse bits and discard them.

Prepare the Mixture: In the same kadai, add the ghee and let it melt. Add the ground moong dal, sugar, and cardamom powder to the ghee. Stir the mixture with a wooden spatula and cook for another 1-2 minutes until the dal absorbs the ghee and the mixture begins to come together.

Shape the Ladoos: Once the mixture has cooled slightly and is pliable, take small portions and shape them into round ladoos by rolling them between your palms. Repeat this process until all the mixture has been shaped.

Garnish and Serve: Garnish the ladoos with chopped cashews, almonds, and pistachios. Store the ladoos in an airtight container and enjoy whenever you like!
