Black Pepper Powder 1/2 teaspoon
Salt To taste
Ghee (for smearing rotis) As required

Instructions

  1. Prepare the Dough:
    Begin by placing the ragi flour, whole wheat flour, finely chopped green chillies, grated ginger, drumstick leaves, black pepper powder, and salt into a large mixing bowl. Mix all the ingredients together thoroughly.

    Gradually add water, little by little, kneading the mixture for about 3 to 4 minutes until the dough becomes soft and smooth. Once done, cover the dough with a damp cloth and let it rest for about 10 minutes to allow the ingredients to meld together.

  2. Roll the Roti:
    Once the dough has rested, divide it into small equal-sized portions. Lightly dust your rolling surface with flour, then take one portion of the dough and roll it out into a flat, round roti, approximately 6 to 8 inches in diameter.

  3. Cook the Roti:
    Heat a skillet or tawa over medium heat and grease it lightly with a small amount of oil or ghee. Once the tawa is hot, place the rolled-out roti onto the skillet. Cook the roti for a couple of minutes until small bubbles start to appear on the surface.

    Flip the roti over and add a small amount of ghee or oil along the edges. Allow it to cook for another 2-3 minutes on this side until it becomes golden brown and slightly crispy. Flip again, if needed, to ensure it cooks evenly.

  4. Serve:
    Once the Drumstick Leaves Ragi Roti is cooked, remove it from the tawa and place it on a serving plate. Smear a little more ghee if desired for extra flavor. Repeat the same process for the remaining dough portions.
