Watermelon Moscato Ring

Ingredients:

Watermelon (Anguria) 6 kg
Moscato wine 200 g
Sugar 150 g
Gelatin sheets 40 g
Lemon juice 40 g

Instructions:

  1. Prepare the Gelatin: Begin by soaking the gelatin sheets in cold water for at least 10 minutes to soften them.

  2. Prepare the Watermelon: While the gelatin is soaking, take the watermelon and cut off both ends. Then, chop the flesh into large pieces, discarding the rind.

  3. Extract the Juice: Place the watermelon chunks into a juicer to extract the juice. You want to separate the juice from the pulp. After juicing, strain the juice through a fine mesh sieve to remove any excess pulp.

  4. Strain the Lemon Juice: Using a fine sieve, strain the lemon juice to ensure it’s smooth and free of seeds or pulp.

  5. Combine Ingredients: Using a hand whisk or electric mixer, combine the watermelon juice, Moscato wine, lemon juice, and sugar in a mixing bowl.

  6. Heat the Mixture: Pour the combined liquid mixture into a saucepan with high sides and heat it over low heat. Stir occasionally to prevent the liquid from burning.

  7. Add Gelatin: Once the mixture has warmed, add the softened gelatin sheets, squeezing out any excess water before adding them. Stir to ensure the gelatin fully dissolves into the liquid.

  8. Dissolve the Sugar: Add the sugar to the mixture and stir continuously for about 5-6 minutes until it has completely dissolved and the mixture is smooth.

  9. Pour into the Mold: Carefully pour the liquid mixture into a 1.5 kg ring mold.

  10. Set and Chill: Cover the mold with plastic wrap and place it in the refrigerator. Allow it to chill for several hours, preferably overnight, to set.

  11. Serve: Once the watermelon Moscato ring has set, gently remove it from the mold. Serve chilled and enjoy this refreshing dessert!

Notes:

  • The watermelon provides a natural sweetness, so adjust the amount of sugar based on the sweetness of the fruit.
  • You can substitute Moscato with any other sweet white wine, but Moscato is perfect for adding a light, aromatic flavor.
