Prepare the Watermelon: While the gelatin is soaking, take the watermelon and cut off both ends. Then, chop the flesh into large pieces, discarding the rind.

Extract the Juice: Place the watermelon chunks into a juicer to extract the juice. You want to separate the juice from the pulp. After juicing, strain the juice through a fine mesh sieve to remove any excess pulp.

Combine Ingredients: Using a hand whisk or electric mixer, combine the watermelon juice, Moscato wine, lemon juice, and sugar in a mixing bowl.

Heat the Mixture: Pour the combined liquid mixture into a saucepan with high sides and heat it over low heat. Stir occasionally to prevent the liquid from burning.

Add Gelatin: Once the mixture has warmed, add the softened gelatin sheets, squeezing out any excess water before adding them. Stir to ensure the gelatin fully dissolves into the liquid.

Dissolve the Sugar: Add the sugar to the mixture and stir continuously for about 5-6 minutes until it has completely dissolved and the mixture is smooth.

Pour into the Mold: Carefully pour the liquid mixture into a 1.5 kg ring mold.

Set and Chill: Cover the mold with plastic wrap and place it in the refrigerator. Allow it to chill for several hours, preferably overnight, to set.
