Category: Main Dishes
Servings: 4

Ingredients:

Ingredient Quantity
Veal 800g
Extra virgin olive oil 5 tbsp
Beef broth As needed
All-purpose flour 1 tbsp
Celery 1 stalk
Carrot 1
Yellow onions 1
Red wine 2 tbsp
Table salt As needed
Ground black pepper As needed
Champignon mushrooms 400g
Garlic cloves 2
Extra virgin olive oil 2 tbsp
Fresh parsley 2 tbsp

Instructions:

To prepare a flavorful Veal Stew with Mushrooms, begin by washing, peeling, and finely chopping one onion, one carrot, and one stalk of celery. In a large, non-stick skillet or pan, heat 5 tablespoons of extra virgin olive oil over medium heat. Add the chopped vegetables and sauté until softened, releasing their aroma.

Next, add the veal cubes to the pan, ensuring they are evenly browned on all sides. Let the veal cook for a few minutes until it develops a rich golden crust. Once the meat is nicely browned, pour in 2 tablespoons of red wine, stirring gently to deglaze the pan. Cover the skillet with a lid, leaving a small gap for steam to escape. Continue to cook the veal, and add beef broth as needed to maintain moisture and tenderness.

While the veal is simmering, prepare the mushrooms. Clean the champignon mushrooms, peel them, and slice them into thin pieces. In another skillet, heat 2 tablespoons of extra virgin olive oil over medium heat. Add one or two crushed garlic cloves, depending on your preference for garlic intensity. Sauté the garlic until fragrant, then add the sliced mushrooms. Cook for about 5 minutes until the mushrooms are tender and browned.

About 5 minutes before the veal is fully cooked, add the sautéed mushrooms to the veal pan. Stir gently to combine the mushrooms with the veal and allow the flavors to meld together for the final few minutes of cooking. Season with salt and freshly ground black pepper to taste.

Once the veal is fully cooked and tender, and the mushrooms have absorbed the savory broth, remove the pan from the heat. Garnish the dish with freshly chopped parsley for a burst of freshness and color.

This Veal Stew with Mushrooms can be served in a variety of ways. For a comforting meal, pair it with fresh, crusty bread, creamy mashed potatoes, or, for a heartier winter dish, enjoy it with steaming hot polenta. The tender veal, earthy mushrooms, and rich flavors make this dish a perfect main course for any occasion, sure to impress family and guests alike.

Pro Tip: For an extra touch of flavor, let the stew rest for a few minutes before serving to allow the flavors to develop even further. This dish also makes excellent leftovers, as the flavors continue to meld over time. Enjoy!
