Baked Potato with Mozzarella and Egg

Ingredients

  • 2 medium potatoes
  • Shredded Kraft cheese, to taste
  • Shredded mozzarella cheese, to taste
  • 1 teaspoon margarine
  • A pinch of black pepper
  • A pinch of oregano
  • 2 free-range eggs

Instructions

  1. Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

  2. Bake the Potatoes: Place the potatoes on a baking sheet and bake them in the preheated oven for about 45-60 minutes, or until they are tender when pierced with a fork. To ensure even cooking, wrap the potatoes individually in aluminum foil before baking.

  3. Prepare the Potato Filling: Once the potatoes are fully baked, remove them from the oven and let them cool slightly. Carefully unwrap the foil and make a slit down the center of each potato. Scoop out the potato flesh into a mixing bowl, being careful not to tear the skins.

  4. Mix the Filling: In the bowl with the potato flesh, add the margarine, shredded Kraft cheese, shredded mozzarella, black pepper, and oregano. Mash and mix the ingredients together until well combined and creamy.

  5. Stuff the Potatoes: Spoon the prepared potato mixture back into the potato skins, filling them generously.

  6. Add the Egg: Make a small well in the center of each stuffed potato and crack an egg into it. Season with a bit more black pepper and oregano to taste.

  7. Top with Cheese: Sprinkle additional shredded mozzarella cheese over the top of the stuffed potatoes.

  8. Bake Again: Return the stuffed potatoes to the oven and bake for an additional 15-20 minutes, or until the eggs are cooked to your liking and the cheese is melted and bubbly.

  9. Serve: Remove from the oven and let cool slightly before serving.

  10. Bonus Tip: If you have any leftover filling, you can spoon it into a small baking dish or cup, add an egg on top, and bake it alongside the stuffed potatoes for a delicious extra treat.
