1 tablespoon Poppy seeds
1/2 cup Hung Curd (Greek Yogurt)
1 tablespoon Turmeric powder (Haldi)
Salt – as per taste
For Tempering 2 tablespoon Sunflower Oil
1 Cinnamon Stick (Dalchini)
1 Cardamom (Elaichi) Pods/Seeds
2 sprig Curry leaves
For Garnishing 1 Onion – chopped
1 sprig Coriander (Dhania) Leaves – for garnish

Instructions:

Step 1: Preparing the Omelette

  1. Begin by breaking the eggs into a bowl and whisking them together with finely chopped onions, coriander leaves, green chillies, and salt. Mix until well combined.
  2. Heat a non-stick or omelette pan with a tablespoon of oil over medium heat.
  3. Once the pan is hot, pour in the egg mixture, spreading it evenly.
  4. Allow the omelette to cook for 2-3 minutes, then gently flip it to cook on the other side.
  5. Once both sides are cooked to golden perfection, fold the omelette and cut it into strips. Set it aside.

Step 2: Making the Curry Paste

  1. In a blender or food processor, combine the chopped onion, green chillies, coriander seeds, black peppercorns, ginger, garlic, and coriander leaves. Grind them into a smooth paste and set it aside.
  2. In the same blender, add the grated fresh coconut, poppy seeds, and blend into a smooth paste. Set aside.

  2. Add the coconut paste to the pan and cook for another 15-20 minutes, allowing the flavors to meld together.
  3. Meanwhile, whisk the hung curd (Greek yogurt) with turmeric powder and salt. Add this mixture to the pan, stirring gently to combine.
  4. Slowly add some water to adjust the consistency of the curry. Bring the mixture to a gentle boil and cook for another 15-20 minutes, stirring occasionally. The curry should thicken and develop a rich, creamy texture.

Step 5: Final Assembly

  1. Once the curry is ready, arrange the omelette strips on a serving plate.
  2. Pour the hot curry over the omelette and let the flavors infuse.
  3. Garnish with freshly chopped coriander leaves for a burst of color and freshness.
