Ingredients:

  • 1 packet active dry yeast
  • 2 tablespoons olive oil
  • 1/2 cup water
  • 3/4 cup milk
  • 15 ounces unbleached flour
  • 1 1/2 teaspoons salt
  • 6 slices mortadella
  • 6 slices prosciutto
  • 6 ounces smoked mozzarella cheese
  • 6 kalamata olives
  • 1/2 red onion
  • 1/2 cup fresh parsley
  • 1/2 cup fresh basil
  • 2 sprigs fresh oregano
  • 2 sprigs Italian parsley
  • 1/4 cup olive oil (for olive salad)
  • 6 garlic cloves
  • 2 green onions
  • 2 ounces parmigiano-reggiano cheese
  • 2 ounces pecorino romano cheese
  • 2 ounces provolone cheese

Instructions:

  1. Prepare the Crust:

    • Combine yeast and water in a bowl with a pinch of sugar, allowing the yeast to proof for about 5 minutes.
    • In a mixer, combine salt and flour, mixing for approximately 15 seconds.
    • Add the yeast mixture, milk, and olive oil to the flour mixture, mixing on low speed until just combined.
    • Knead the dough with a dough hook attachment until it becomes soft and pliable.
    • Transfer the dough to a floured surface and knead by hand until it is no longer sticky.
    • Cover the dough and let it rise in a warm place until it doubles in size, approximately 1 hour.
    • Once risen, punch the dough down, divide it into two equal portions, shape each portion into a ball, cover, and let them rise again until doubled, about 30 minutes.
    • Form each dough ball onto lightly oiled 9×13-inch cookie sheets, dimple the dough, lightly coat with olive oil, sprinkle with salt, and bake at 500°F on a pizza stone until it just starts to brown, approximately 7 minutes.
  2. Prepare the Olive Salad:

    • Chop the olives, herbs, garlic, and onions, then combine them with 1/4 cup of olive oil to create the olive salad.
  3. Prepare the Filling:

    • Chop the meats and smoked mozzarella cheese into 1/8-inch by 2-inch strips and place them in a resealable freezer bag.
    • Add the olive salad to the bag, mix well, shred the hard cheeses, and add them to the meat mixture.
    • Adjust the seasoning with salt and pepper to taste, and add more olive oil if necessary.
  4. Final Assembly:

    • Spread half of the filling mixture evenly over each prepared pizza crust.
    • Broil the pizzas until the cheese is bubbly and golden brown.
    • If desired, protect the edges of the crust from burning by covering them with foil.

Variations:

  • Customize your Muffuletta Pizza by using leftover grilled sausage or omitting some or all of the meats.
  • Add any additional herbs or toppings according to your preference to create a unique flavor profile.

Indulge in the delightful flavors of Muffuletta Pizza, a perfect addition to any potluck, weeknight dinner, or casual gathering. With its tantalizing combination of meats, cheeses, and zesty olive salad, this pizza is sure to become a family favorite. Enjoy the deliciousness of Italy in every bite!
