Chicken (cleaned) 750 grams

For the Masala Gravy:

Ginger (finely chopped) 1 tablespoon
Garlic (finely chopped) 1 tablespoon
Homemade Tomato Puree 1 cup
Onions (chopped, roasted till soft & ground to paste) 2
Salt To taste

Fresh Cream 2 tablespoons

Instructions:

  1. Prepare the Chicken for Marination:

    • Begin by ensuring that the chicken is thoroughly cleaned and patted dry with a paper towel. For better flavor absorption, prick the chicken pieces with a fork. This will help the marinade penetrate deep into the chicken.
  2. Marinate the Chicken:

    • In a mixing bowl, combine the following for the chicken marinade: dahi (yogurt), ginger garlic paste, coriander powder, cumin powder, salt, turmeric powder, kasuri methi, and kashmiri red chilli powder.
    • Coat the chicken pieces well in the marinade. Let this sit for 3 to 4 hours to ensure the flavors infuse into the meat.
  3. Bake the Chicken:

    • Preheat your oven to 180°C (350°F). Place the marinated chicken pieces on a baking tray and bake for 30-40 minutes, depending on the size of the chicken pieces. Ensure the chicken is cooked through and slightly golden.

    • Once the chicken is baked, take a small piece of charcoal and burn it over direct flame. Place the chicken in a serving dish, and in the center, place a small bowl (katori). Put the burning charcoal in the bowl and pour ghee over it.

  5. Prepare the Masala Gravy:

    • Add the homemade tomato puree along with the onion paste. Stir well and cook the mixture for 2-3 minutes until it all comes together and the oil begins to separate from the gravy.
    • Season with salt and red chili powder to taste.
