Ingredients:

  • 1 cup water
  • 1 cup plain yogurt

Instructions:

  1. Prepare the Liquid Mixture: In a saucepan, heat water, yogurt, and oil until simmering.
  2. Incorporate Oats and Wheat Germ: Stir in old-fashioned oats, quick-cooking oats, and wheat germ. Allow the mixture to cool until it reaches a very warm temperature (120 to 130ยฐF), approximately 30 minutes.
  3. Combine Dry Ingredients: In a large bowl, mix 1 cup of all-purpose flour with brown sugar, undissolved yeast, and salt.
  4. Blend with Liquid Mixture: Add the cooled oat and wheat germ mixture to the dry ingredients. Blend well.
  5. Add Eggs and Flour: Stir in 1 beaten egg and enough of the remaining flour to form a soft dough.
  6. Knead the Dough: On a lightly floured surface, knead the dough until it becomes smooth and elastic, usually taking around 6-8 minutes.
  7. Allow the Dough to Rest: Cover the dough and let it rest on a floured surface for approximately 10 minutes.
  8. Divide and Shape: Divide the dough into two equal parts. Roll each part into a 12ร—7-inch rectangle.
  9. Roll and Seal: Starting from the short end, tightly roll each rectangle as if making a jelly roll. Pinch the seams and ends to seal.
