Hearty Mushroom and Beef Soup Recipe

Ingredients:

  • 1 lb boneless beef chuck
  • 1 onion
  • 1 cup beef broth
  • 3 tomatoes
  • 14 oz fresh mushrooms
  • 8 tsp dried oregano
  • 3/4 tsp instant minced garlic
  • 3/4 tsp bay leaf
  • 1 carrot
  • 1/2 cup water
  • 2 tbsp cornstarch
  • 4 cups cooked rice
  • 1/4 cup dry red wine
  • 1 rosemary sprig
  • Olive oil (for cooking)

Instructions:

  1. Preparation: Start by gathering all the necessary ingredients and equipment.

  2. Sauté Beef: In a large saucepan, heat olive oil over medium-high heat. Add half of the boneless beef chuck, and cook while stirring occasionally for about 2-3 minutes, or until the beef is browned. Use a slotted spoon to remove the browned beef from the pan, and set it aside. Repeat the process with the remaining beef and onion.

  3. Combine Ingredients: Once all the beef and onion are browned, return them to the saucepan. Stir in beef broth, crushed tomatoes, sliced mushrooms, dried oregano, minced garlic, and bay leaf.

  4. Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover the saucepan and let the soup simmer for about 1 hour, allowing the flavors to meld together.

  5. Add Carrot: After simmering for an hour, add the sliced carrot to the soup. Bring it back to a boil, then reduce the heat, cover, and let it simmer for an additional 7 minutes, or until the carrot is tender.

  6. Thicken Soup: In a small bowl, combine cold water and cornstarch to make a slurry. Gradually add the slurry to the soup while stirring constantly. Cook and stir until the soup is slightly thickened.

  7. Finish: Once the soup has thickened, add the dry red wine and heat for an additional 2 minutes.

  8. Serve: Discard the bay leaf, and ladle the hearty mushroom and beef soup into serving bowls. Garnish each bowl with a sprig of fresh rosemary for added flavor and aroma.
