Instructions

Step 1: Open the Oysters
To begin making the gratinated oysters with mushrooms, start by carefully opening the oysters. The process of opening the oysters requires precision, so make sure you have the right equipment—a specialized oyster knife with a thin tip, a protective handle, and a firm grip are essential for safety. Place one hand firmly on the oyster and use the other hand to insert the knife into the opening, cutting through the muscle that holds the oyster closed. Once you’ve severed the muscle, continue to gently open the oyster by following its circumference.

Step 2: Collect the Oyster Liquids
Once the oysters are open, carefully collect the liquid from each oyster and strain it through a fine mesh sieve into a bowl. You can use this precious liquid for added flavor during the cooking process.
