Instructions:

  1. Prepare the Ingredients:
    Begin by washing and cleaning the button mushrooms. Slice them into thick slices, ensuring they are uniform in size for even cooking. Cube one onion and finely chop the second onion. Also, chop the tomato, ginger, garlic, and slit the green chili.

  2. Saute the Onions and Bell Peppers:
    Heat 2-3 tablespoons of sunflower oil in a kadai (Indian wok) on medium heat. Add the cubed onions and sauté them until they turn soft and caramelized. Once caramelized, remove them from the pan and set them aside.

  3. Cook the Aromatics:
    In the same pan, add chopped ginger and garlic. Allow them to soften and release their aroma. Then, add the finely chopped onions and cook until they turn translucent and soft.

  4. Add the Tomatoes and Spices:
    Add the chopped tomatoes to the pan and sprinkle a pinch of salt over them. Stir occasionally and cook until the tomatoes soften and become mushy. Once the tomatoes have cooked down, add the following spice powders: red chili powder, turmeric powder, coriander powder, cumin powder, and garam masala powder. Stir well to combine the spices and let them cook for a couple of minutes.

  5. Cook the Mushrooms:
    Now, add the sliced mushrooms to the pan. Cook the mushrooms on medium-high heat until they release their moisture and the water evaporates. This may take around 10-12 minutes. Stir occasionally to ensure the mushrooms are evenly cooked and the spices coat them well.

  6. Final Touches:
    Once the mushrooms are cooked and most of the moisture has evaporated, add the sautéed onions and bell peppers back into the pan. Mix everything well and cook for another 5 minutes, allowing the flavors to meld together. The dish should now have a semi-dry consistency.

  7. Adjust Seasoning:
    Taste the dish and adjust the salt if needed. Stir one last time to ensure everything is evenly mixed.

  8. Serve:
