Ingredients:

  • 1/2 cup wild rice
  • 1/2 cup pearl barley
  • 1/2 cup brown rice
  • 1/4 onion
  • 1 garlic clove

  • 3 1/2 cups dried oregano
  • Salt and pepper to taste

Instructions:

  1. Preparation:

    • Combine wild rice, pearl barley, and brown rice in a mixing bowl. Set aside.
  2. Saute Onion and Garlic:

    • Pour oil into a 2 to 3 quart casserole safe for stovetop and oven cooking. Place it on medium heat.
    • Saute onion and garlic until tender and translucent, about 5 to 6 minutes.
  3. Add Mixed Grains:

    • Add the mixed grains to the casserole and saute for 1 minute, stirring constantly.
  4. Saute Mushrooms:

    • Meanwhile, melt butter in a separate pan over medium-high heat.
    • Add mushrooms and saute quickly, stirring frequently, until they are hot and have absorbed the butter, about 1 minute.
    • Immediately remove from heat.
  5. Combine Ingredients:

    • Add the broth, dried thyme, dried oregano, and sauteed mushrooms to the casserole with the onions and grains.
    • Bring the mixture to a boil.
  6. Season and Bake:

    • Season with salt and pepper to taste.
    • Cover the casserole tightly. Use aluminum foil between the pot and cover if necessary for a good seal.
    • Bake at 350 degrees Fahrenheit for 1 hour.
