Garam masala powder 1/2 teaspoon
Ghee 2 tablespoons
Dry red chillies 2 whole
Cumin seeds (Jeera) 1/2 teaspoon

Instructions

  1. Soak the Lentils and Prepare the Mutton:
    Begin by washing and soaking the chana dal (Bengal gram) and arhar dal (toor dal) in water for 30 minutes. In the meantime, wash the mutton pieces thoroughly and drain off any excess water.

  2. Cook the Dal and Mutton:
    In a pressure cooker, combine the soaked lentils, mutton pieces, turmeric powder, salt, and 3 cups of water. Cook under pressure for about 15–20 minutes, or until both the lentils and mutton are tender and fully cooked.

  3. Prepare the Masala:
    While the dal and mutton are cooking, heat 2 tablespoons of ghee in a heavy-bottomed pan over medium heat. Add the cumin seeds and dry red chillies, allowing them to splutter for a few seconds.

  4. Add the Onions and Fry:
    Add the finely chopped onion to the pan and sauté until it turns golden brown, which should take about 7–8 minutes. Stir occasionally to avoid burning.

  5. Add the Spices:
    Add the ginger and garlic paste to the onions and cook for another minute, stirring to blend the flavors. Then, sprinkle in the red chilli powder, coriander powder, cumin powder, black pepper powder, and garam masala powder. Fry the spices with the onion mixture until the ghee separates from the masala, about 4–5 minutes.

  6. Combine the Cooked Dal and Mutton:
    Once the dal and mutton mixture is cooked, add it to the spice-infused ghee and onion mixture in the pan. Stir well to combine everything, making sure the lentils and meat are evenly coated in the masala.

  7. Simmer and Serve:
    Bring the combined mixture to a boil. Once it starts boiling, lower the heat and let it simmer for an additional 10 minutes, allowing the flavors to meld together. Once done, remove the pot from the heat.

  8. Garnish and Final Touch:
    Garnish with fresh lemon slices for a touch of brightness, and you’re ready to serve.
