Chana Dal (Bengal Gram Dal) 150 grams
Masoor Dal (Whole) 50 grams
Arhar Dal (Split Toor Dal) 50 grams
Tomato, finely chopped 1
Onion, finely sliced 3
Amchur (Dry Mango Powder) 5 whole
Cinnamon Stick (Dalchini) 2 inches
Bay Leaf (Tej Patta) 2
Whole Black Peppercorns 6
Cardamom (Elaichi) Pods 4
Cumin Seeds (Jeera) 1 teaspoon
Sunflower Oil As required
Ghee 1 tablespoon
Mint Leaves (Pudina) 2 sprigs
Salt To taste
Ginger Garlic Paste 1 tablespoon
Red Chilli Powder 2 teaspoons
Cumin Powder (Jeera) 1 teaspoon
Coriander Powder (Dhania) 2 teaspoons
Turmeric Powder (Haldi) 1 teaspoon
Fresh Coriander (Dhania) Leaves 5 sprigs, finely chopped

Instructions

  1. Prepare the Dal:

    • In a pressure cooker, combine the chana dal, masoor dal, and arhar dal with water. Cook until the dals are soft and mushy. Once cooked, use a hand blender to blend the mixture into a smooth consistency.
  2. Cook the Mutton:

    • In another pressure cooker, add the mutton along with a pinch of salt and enough water to cover it. Cook for about 15 minutes until the mutton is tender and well-cooked.
  3. Prepare the Spice Base:

    • In a heavy-bottomed pan, heat the sunflower oil and ghee together. Add the whole spices: cinnamon stick, bay leaves, black peppercorns, cardamom pods, and cumin seeds. Cook them for about 30 seconds until fragrant.
  4. Sauté the Onions:

    • Add the finely sliced onions to the pan and sauté until they turn golden brown. Be careful not to burn them.
  5. Add the Aromatics:

    • Stir in the ginger garlic paste and cook for a minute. Then, add the red chilli powder, cumin powder, coriander powder, turmeric powder, and salt. Mix well.
  6. Cook the Bottle Gourd:

    • Add the chopped bottle gourd (lauki) and tomatoes to the pan. Stir everything together and cook until the bottle gourd is half-cooked and soft.
  7. Incorporate the Mutton and Dal:

    • Add the boiled mutton to the pan along with the blended dal mixture. Stir everything to combine. Let it cook for 5 minutes so the flavors can meld together.
  8. Final Touches:

    • Add the whole mint leaves, amchur (dry mango powder), and a squeeze of lemon juice. Let it cook for another 5 minutes to allow the flavors to come together.
  9. Garnish and Serve:

    • Garnish the Dudhi Dal Gosht with freshly chopped coriander leaves.
