Instructions:

  1. Cook the Pumpkin: Start by heating tamarind water in a non-stick pan. Add the pumpkin pieces and cook on medium heat until the pumpkin becomes tender. Once the pumpkin is cooked, slightly mash or grate it to a finer texture.

  2. Prepare the Tempering: In a separate pan or kadhai, heat oil and add mustard seeds, bay leaf, fennel seeds, dry red chilies, and raisins. Let the mustard seeds splutter and the spices infuse their flavors.

  3. Combine and Cook: Add the cooked pumpkin to the kadhai with the tempering. Stir well to combine the ingredients. Add salt and jaggery to the mixture and cook until the consistency thickens and all the flavors meld together.

  4. Finish the Dish: Once the pumpkin has thickened and the jaggery has dissolved, turn off the heat. Add lemon juice and give it a final mix to balance the flavors.

  5. Serve: Serve the Pumpkin Ombhal hot with Naga-style chicken curry and steamed rice for a wholesome meal.
