Ingredients:

  • 1 cup white wine vinegar
  • 6 shallots
  • 1 horseradish
  • 2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp clove
  • 1 nutmeg
  • 1 mace
  • Nasturtium buds (as needed)

Instructions:

Step Instruction
1 Combine everything but the pod in a pot and bring to boil.
2 Let cool.
3 Pour into a jar.
4 After blooms drop off the Nasturtium flowers, pick off have ripened pods.
5 Wash and pat dry the pods.
6 Put pods in the jar.
7 Keep adding as your crop develops.
8 Keep refrigerated.

Directions:

  1. Prepare the Brine: In a pot, combine white wine vinegar, finely chopped shallots, grated horseradish, salt, pepper, clove, nutmeg, and mace. Bring the mixture to a gentle boil over medium heat.

  2. Cool the Brine: Once boiled, remove the pot from heat and allow the brine to cool to room temperature. This step ensures that the flavors meld together perfectly.

  3. Transfer to Jar: Carefully pour the cooled brine into a clean quart-sized jar. The jar should be sterilized beforehand to maintain freshness.

  4. Harvest Nasturtium Buds: As the blooms drop off the Nasturtium flowers, inspect the plant for ripened pods. These pods will serve as your “capers.”

  5. Prepare Pods: Wash the harvested pods thoroughly and pat them dry with a clean kitchen towel. Ensuring they’re dry helps in preserving them well.

  6. Add to Jar: Place the washed and dried pods into the jar with the prepared brine. Ensure they are fully submerged in the liquid.

  7. Continued Harvest: As your Nasturtium crop continues to develop, keep adding the ripened pods to the jar. This ensures a continuous supply of homemade capers.

  8. Storage: Seal the jar tightly and store it in the refrigerator. Proper refrigeration helps in maintaining the freshness and flavor of the capers.

  9. Enjoy: These homemade peasant capers are ready to enhance your salads, dressings, or any dish that calls for the tangy, flavorful addition of capers. Enjoy the fruits of your labor! 🌱
