Begin by soaking all the pulses (green moong dal, white urad dal, black urad dal, masoor dal, rajma, kabuli chana, yellow moong dal, and arhar dal) overnight for best results. For quicker preparation, soak the yellow moong dal and arhar dal for 20 minutes. -
Cooking the Pulses:
The next morning, drain the soaked pulses and add them to a pressure cooker. Cook the pulses for about 3 whistles, ensuring they are well-cooked and tender. After the cooker cools, mash the dal mixture lightly and set it aside. -
Tempering the Spices:
Heat 2 tablespoons of ghee in a pan over medium heat. Add 1 stick of cinnamon and 1 teaspoon of cumin seeds. Allow the spices to sizzle and release their aroma for about 15 seconds. -
Sautéing Onions and Ginger-Garlic:
Once the spices have cooked, add the finely chopped onion to the pan and sauté until they turn light brown. Stir in the ginger-garlic paste and cook for about 2 minutes until the raw aroma disappears. -
Adding Tomatoes and Green Chilli:
Add the finely chopped tomatoes and green chilli to the pan. Cook this mixture until the tomatoes soften and blend into the spices, forming a flavorful base. -
Spicing It Up:
To the cooked tomato mixture, add the coriander powder, red chilli powder, and garam masala powder. Stir the mixture well and let it cook for about 3 minutes. The spices will begin to release their aroma, creating a rich base for the dal. -
Simmering the Dal:
Now, add the cooked dal to the spice mixture. Add salt to taste and water to reach your desired consistency for the dal. Allow it to simmer for 10 minutes so the flavors meld together beautifully. -
Final Touches:
After 10 minutes, add the kasuri methi to the dal and stir well. Let it cook for an additional 2 minutes. Garnish with finely chopped fresh ginger for an added flavor boost. -
