Instructions

Step 1: Prepare the Koftas

  1. Preheat the oven to 200°C (400°F) and grease a baking sheet with butter.
  2. In a large bowl, combine the mashed boiled potatoes, half of the crumbled cottage cheese, and salt. Mix well and form 10 small round balls.
  3. In another bowl, mix the remaining crumbled cottage cheese, cashews, raisins, chopped green chillies, salt, and fresh coriander. Form 10 more small balls.
  4. Grease your hands with oil and flatten each potato ball. Place a dry fruit ball in the center and seal it by wrapping the potato around it, forming a stuffed kofta. Repeat for all the koftas.
  5. Arrange the koftas on the prepared baking sheet and bake for 30 minutes, or until golden brown. Once done, set them aside.

Step 2: Prepare the Curry

  1. In a blender, grind the chopped onion, garlic, ginger, and green chillies into a smooth paste. Set it aside.
  2. Heat oil in a kadhai (wok) and sauté the onion paste for 2 minutes until the raw smell disappears.
  3. Add fennel seeds, coriander seeds, cloves, cinnamon, and cardamom pods. Sauté for 30 seconds to release the aroma of the spices.
  4. Add the tomato puree, turmeric powder, red chilli powder, and sugar. Cook for 5 minutes, allowing the sauce to thicken.
  5. Pour in the fresh cream and cook for another 2 minutes to combine everything well.
  6. Gently add the prepared koftas into the curry and simmer for 2 more minutes, allowing the koftas to absorb the flavors of the sauce.

Step 3: Garnish and Serve

  1. Garnish with fresh coriander leaves.
  2. Serve the Nawabi Kofta Curry hot with tawa paratha or spinach raita for a complete meal.
