Instructions
Step 1: Prepare the Koftas
- Preheat the oven to 200°C (400°F) and grease a baking sheet with butter.
- In a large bowl, combine the mashed boiled potatoes, half of the crumbled cottage cheese, and salt. Mix well and form 10 small round balls.
- In another bowl, mix the remaining crumbled cottage cheese, cashews, raisins, chopped green chillies, salt, and fresh coriander. Form 10 more small balls.
- Grease your hands with oil and flatten each potato ball. Place a dry fruit ball in the center and seal it by wrapping the potato around it, forming a stuffed kofta. Repeat for all the koftas.
- Arrange the koftas on the prepared baking sheet and bake for 30 minutes, or until golden brown. Once done, set them aside.
Step 2: Prepare the Curry
- In a blender, grind the chopped onion, garlic, ginger, and green chillies into a smooth paste. Set it aside.
- Heat oil in a kadhai (wok) and sauté the onion paste for 2 minutes until the raw smell disappears.
- Add fennel seeds, coriander seeds, cloves, cinnamon, and cardamom pods. Sauté for 30 seconds to release the aroma of the spices.
- Add the tomato puree, turmeric powder, red chilli powder, and sugar. Cook for 5 minutes, allowing the sauce to thicken.
- Pour in the fresh cream and cook for another 2 minutes to combine everything well.
- Gently add the prepared koftas into the curry and simmer for 2 more minutes, allowing the koftas to absorb the flavors of the sauce.

- Garnish with fresh coriander leaves.
