Nawabi Kofta Curry Recipe

Ingredients:
- 4 boiled potatoes, peeled and chopped
- 250 grams paneer, crumbled
- 1/4 cup cashews, finely chopped
- 1/4 cup raisins
- 2 green chilies, finely chopped
- A handful of fresh coriander, chopped
- Salt, to taste
- Oil, as needed
- 2 cups tomato puree
- 1 onion, chopped
- 2 garlic cloves
- 1-inch piece of ginger
- 1 tsp fennel seeds
- 1 tsp coriander seeds
- 2 cloves
- 1-inch cinnamon stick
- 2 cardamom pods
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1/4 cup cream
- 1/2 tsp sugar
- Salt, to taste
- Fresh coriander, chopped (for garnish)

Cooking Time: 45 mins
Instructions:
- Preheat the oven to 200ยฐC (392ยฐF). Grease a baking sheet with butter.
- In a large bowl, combine mashed potatoes, 1/2 of the crumbled paneer, and salt. Mix well and shape into 10 small balls.
- In a separate bowl, mix the remaining paneer, cashews, raisins, green chilies, salt, and coriander. Shape this mixture into 10 small balls.
- Grease your hands with oil. Take one potato ball, flatten it in your palms, and place one dry fruit ball in the center. Seal the potato mixture around the dry fruit mixture to form a complete ball. Repeat this process for all balls.
- Place the prepared koftas on the baking sheet and bake for 30 minutes, until golden brown. Set aside.
- In a blender, combine onion, garlic, ginger, and green chilies. Blend to a smooth paste and set aside.
- Heat oil in a pan. Add the onion paste and sautรฉ for 2 minutes.
- Add fennel seeds, coriander seeds, cloves, cinnamon, and cardamom. Cook for 30 seconds.
- Add the tomato puree, turmeric powder, red chili powder, and sugar. Cook for 5 minutes.
- Stir in the cream and cook for another minute.
- Gently add the koftas to the curry and cook for another 2 minutes to allow the flavors to combine.
- Serve the Nawabi Kofta Curry hot, garnished with fresh coriander.
