Danubio Dolce al Nesquik – Sweet Danube with Nesquik
Category: Yeast Breads
Servings: 15 pieces

Ingredients:

Ingredient Quantity
Nesquik 100g
Manitoba flour 175g
All-purpose flour (00 type) 120g
Whole milk 100ml
Butter 50g
Eggs 2 (1 for the dough, 1 for glazing)
Sugar 15g
Dry yeast (or 15g fresh yeast) 4g
Salt 2g
Orange zest 1 orange
Orange marmalade 150g
Chocolate chips 80g

Instructions:

  1. Prepare the dough:
Begin by sifting the Manitoba and all-purpose flour into the bowl of a stand mixer equipped with a dough hook attachment. Add the finely grated orange zest for a fragrant, citrusy note.

  2. Activate the yeast:
In a small bowl, dissolve the dry yeast in warm milk (alternatively, you can use 15g of fresh yeast). Add the activated yeast mixture to the flour mixture in the stand mixer.

  3. Mix the ingredients:
Add the egg, sugar, and salt to the mixture, then start mixing on a low speed to incorporate the ingredients. Gradually increase the speed and mix until a dough starts to form. If the dough feels too soft or sticky, add a little more flour, a bit at a time, until it reaches the right consistency.

  4. Knead and rise:
Once the dough has come together, knead it for about 10 minutes, or until it becomes smooth and elastic. Form the dough into a ball and place it in a lightly greased bowl. Cover the bowl with plastic wrap and let the dough rise in a warm place for about 3 hours, or until it has doubled in size.

  5. Shape the dough:
After the dough has risen, transfer it to a floured surface and gently punch it down. Divide the dough into small portions and flatten each portion into a small disk. In the center of each disk, place about 10g of orange marmalade. Fold the edges of the dough over the marmalade, pinching them together to form a small ball or bundle.

  6. Prepare the baking pan:
Line a rectangular baking pan (28 x 18 cm) with parchment paper. Arrange the filled dough balls closely together in the pan, making sure they are touching. Cover the pan with plastic wrap and allow the dough balls to rise for about 1 hour, until they have doubled in size and have begun to stick together, forming a cohesive block.

  7. Glaze and bake:
Preheat the oven to 180°C (350°F). Gently brush the surface of the risen dough with a beaten egg yolk to create a beautiful golden finish during baking. Sprinkle the top with the chocolate chips, allowing them to nestle into the dough.

  8. Bake to perfection:
Place the pan in the preheated oven and bake for about 25-30 minutes, or until the Danubio is golden brown on top and fully cooked inside. Keep an eye on it to ensure the top doesn’t brown too quickly; if necessary, cover it with foil and continue baking until done.

  9. Serve and enjoy:
Once baked, remove the Danubio from the oven and let it cool slightly before serving. The sweet, soft dough, orange marmalade filling, and chocolate chips create an irresistible treat perfect for any occasion.

Tips for Success:

  • Flour types: Using both Manitoba and all-purpose flour gives this Danubio its light, airy texture. If you can’t find Manitoba flour, you can substitute it with strong bread flour.
  • Resting time: Don’t rush the rising process! The longer the dough rises, the fluffier and more flavorful your Danubio will be.
  • Filling variations: While this recipe uses orange marmalade and chocolate chips, feel free to experiment with other jams or fillings like Nutella, apricot, or even a cream cheese blend for a fun twist.

Enjoy this delicious, pillowy Danubio Dolce al Nesquik as a breakfast treat, a sweet snack, or as a dessert at any gathering!
