Chocolate Easter Eggs

Ingredients:

  • 1/4 cup margarine
  • 1/4 cup milk
  • 1 package (3.4 oz) Jell-O pudding mix (vanilla flavor)
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar
  • 1 cup chocolate chips

Instructions:

  1. Melt and Combine: In a medium saucepan, melt the margarine over low heat. Once melted, stir in the milk and Jell-O pudding mix. Cook the mixture for about 2 minutes, stirring constantly, until it starts to thicken slightly. Remove the saucepan from the heat.

  2. Add Flavor: Stir in the vanilla extract and powdered sugar until the mixture is smooth and well combined.

  3. Shape and Chill: Using your hands or a small scoop, shape the pudding mixture into small balls, about the size of a walnut. Place the balls on a baking sheet lined with parchment paper. Refrigerate for about 15 minutes, or until the balls are firm.

  4. Dip in Chocolate: While the balls are chilling, melt the chocolate chips in a double boiler or a heatproof bowl set over a pot of simmering water. Stir until smooth and completely melted.

  5. Coat with Chocolate: Remove the balls from the refrigerator. Using a toothpick, dip each ball into the melted chocolate, coating it thoroughly. Place the coated balls back onto the parchment-lined baking sheet.
