Instructions:
-
Combine dry ingredients. 🌾 In a large mixing bowl, whisk together flour, sugar, salt, and baking soda until well combined.
-
Combine other ingredients and add to dry ingredients. 🥚 In another bowl, beat the eggs lightly, then mix in the buttermilk, raisins, and walnuts until evenly distributed.
-
Mix with spoon just to moisten. 🥄 Gently fold the wet ingredients into the dry ingredients until just moistened. Avoid overmixing.
-
Fold mixture. 🔄 Using a spatula, fold the mixture together until no streaks of flour remain. The batter will be thick and slightly lumpy.
-
Put in refrigerator overnight. ❄️ Cover the bowl with plastic wrap and refrigerate the batter overnight, allowing the flavors to meld and the batter to thicken.
-
Spoon into greased muffin pans, being careful to take batter from sides and not mix batter anymore. 🥣 Preheat the oven to 400°F (200°C) and grease your muffin pans well. Using an ice cream scoop or spoon, portion the batter into the prepared muffin pans, taking care not to overmix the batter further.
-
Bake on bottom rack at 400 degrees for 5 minutes; then bake on top rack 15 minutes. 🎂 Place the filled muffin pans on the bottom rack of the preheated oven and bake for 5 minutes. Then move the pans to the top rack and continue baking for an additional 15 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
