Instructions:

  1. Combine dry ingredients. 🌾 In a large mixing bowl, whisk together flour, sugar, salt, and baking soda until well combined.

  2. Combine other ingredients and add to dry ingredients. 🥚 In another bowl, beat the eggs lightly, then mix in the buttermilk, raisins, and walnuts until evenly distributed.

  3. Mix with spoon just to moisten. 🥄 Gently fold the wet ingredients into the dry ingredients until just moistened. Avoid overmixing.

  4. Fold mixture. 🔄 Using a spatula, fold the mixture together until no streaks of flour remain. The batter will be thick and slightly lumpy.

  5. Put in refrigerator overnight. ❄️ Cover the bowl with plastic wrap and refrigerate the batter overnight, allowing the flavors to meld and the batter to thicken.

  6. Spoon into greased muffin pans, being careful to take batter from sides and not mix batter anymore. 🥣 Preheat the oven to 400°F (200°C) and grease your muffin pans well. Using an ice cream scoop or spoon, portion the batter into the prepared muffin pans, taking care not to overmix the batter further.

  7. Bake on bottom rack at 400 degrees for 5 minutes; then bake on top rack 15 minutes. 🎂 Place the filled muffin pans on the bottom rack of the preheated oven and bake for 5 minutes. Then move the pans to the top rack and continue baking for an additional 15 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

Serve these Ever Ready Muffins warm with a pat of butter or your favorite jam for a delightful breakfast or snack! Enjoy the wholesome goodness and convenience of these make-ahead muffins that are perfect for busy mornings or unexpected guests.
