Instructions
-
Prepare the Biscuit Base:
Begin by placing the digestive biscuits into a food processor. Pulse until they form fine crumbs.
Melt the butter in a small saucepan or microwave, then add it to the biscuit crumbs.
Mix thoroughly using a spatula until the crumbs are evenly coated with butter. -
Assemble the Base:
Line the bottom of a 20cm (8-inch) springform pan with parchment paper.
Pour the biscuit mixture into the pan and use a spatula to spread and level it.
Press the mixture down gently using the back of a spoon to create a compact, smooth base.
Refrigerate the base for 30 minutes to allow it to set. -
Make the Cheesecake Filling:
In a large bowl, pour in the sweetened vegetable cream and whip it using electric beaters until soft peaks form.
Add the cream cheese to the whipped cream, followed by the powdered sugar and desiccated coconut.
Continue mixing until everything is well combined and smooth. -
Add the Amarena Cherries:
Drain the amarena cherries and chop them into smaller pieces.
Fold the chopped cherries gently into the cheesecake mixture, ensuring an even distribution throughout. -
Assemble the Cheesecake:
Pour the cream cheese mixture onto the chilled biscuit base.
Smooth the top with a spatula to create an even layer.
Refrigerate the cheesecake for at least 6 hours, or until the filling has set completely. -
Garnish and Serve:
Once the cheesecake is fully set, garnish the top with additional amarena cherries and a sprinkle of coconut flakes for extra flavor and texture.
