Add the curry leaves (कढ़ी पत्ता) and slit green chili (हरी मिर्च) to the pan. Stir and sauté for about 2 minutes to release the flavors. -
Add Vegetables:
Once the spices have infused the oil, add the chopped potatoes (आलू), carrots (गाजर), and green peas (हरा मटर). Stir everything together. -
Add Water & Cook:
Pour in 1 cup of water and cover the pan. Reduce the heat to low and allow the vegetables to cook until the potatoes and carrots are tender. This should take about 10-12 minutes. -
Add Spices:
