कढ़ी पत्ता (Curry Leaves) 1 sprig
हल्दी पाउडर (Turmeric Powder) ½ tsp
लाल मिर्च पाउडर (Red Chilli Powder) 1 tsp
हींग (Asafoetida) ¼ tsp
हरी मिर्च (Green Chili) 1, slit in half
नमक (Salt) To taste (use black salt for vrat)
तेल (Oil) 2 tsp
हरा धनिया (Coriander Leaves) For garnish

Instructions

  1. Heat Oil for Tempering:
    Begin by heating oil in a pan or kadhai over medium heat. Once the oil is hot, add the mustard seeds (राइ). Let them crackle for about 10 seconds.

  2. Add Cumin & Asafoetida:
    After the mustard seeds crackle, add the cumin seeds (जीरा) and asafoetida (हींग). Stir well and allow the cumin to splutter.

  3. Cook Curry Leaves & Green Chili:
    Add the curry leaves (कढ़ी पत्ता) and slit green chili (हरी मिर्च) to the pan. Stir and sauté for about 2 minutes to release the flavors.

  4. Add Vegetables:
    Once the spices have infused the oil, add the chopped potatoes (आलू), carrots (गाजर), and green peas (हरा मटर). Stir everything together.

  5. Add Water & Cook:
    Pour in 1 cup of water and cover the pan. Reduce the heat to low and allow the vegetables to cook until the potatoes and carrots are tender. This should take about 10-12 minutes.

  6. Add Spices:
    Once the vegetables are cooked, add turmeric powder (हल्दी पाउडर) and red chili powder (लाल मिर्च पाउडर). Mix the spices well into the vegetables.

  7. Season & Cook Further:
    Add salt (नमक) according to your taste. If you are making this sabzi during a vrat, use black salt (कला नमक). Stir everything together and cook for another 2 minutes to allow the flavors to blend.

  8. Garnish & Serve:
    Garnish with freshly chopped coriander leaves (हरा धनिया) for a fresh aroma and added flavor. Serve the sabzi hot with your choice of paratha, roti, or even a bowl of steaming rice.
