Mustard Seeds (Rai) 1 teaspoon
Cumin Seeds (Jeera) 1 teaspoon
Asafoetida (Hing) 1/2 teaspoon
Turmeric Powder 1/2 teaspoon
Grated Coconut 1 tablespoon
Ground Peanuts 1 tablespoon
Kokum (or Tamarind Paste) 3 dried kokum or 1 teaspoon tamarind
Jaggery (Gur) 1 teaspoon, grated
Goda Masala 1/2 teaspoon
Red Chili Powder 1/2 teaspoon
Salt To taste

Instructions:

  1. Pressure Cook the Beans:
    Start by rinsing the soaked black-eyed beans and add them to a pressure cooker with 2 cups of water. Cook for 1 whistle and then simmer for 10 minutes. Once done, drain the water and set it aside for later use.

  2. Prepare the Tempering:
    In a pan, heat 1 tablespoon of oil. Once the oil is hot, add mustard seeds and cumin seeds. Let them splutter for about 10 seconds, releasing their fragrance.

  3. Add Spices:
    To the tempered oil, add asafoetida, turmeric powder, red chili powder, and goda masala. Stir well to ensure the spices blend together and cook for about 1 minute to release their flavors.

  4. Cook the Beans:
    Now, add the cooked black-eyed beans into the pan. Pour in the reserved cooking water from the beans, and mix well. Let this simmer for a few minutes to absorb the flavors.

  5. Add the Special Ingredients:
    Add the kokum (or tamarind paste), grated jaggery, ground peanuts, grated coconut, and salt to the curry. Stir everything well and cook for another 3-4 minutes until the curry thickens and the ingredients are well combined.

  6. Final Touch:
    Once done, turn off the heat. Serve the curry with fresh roti (Indian bread) and a side of onion-tomato-cucumber raita for a complete and satisfying lunch.
