Bay leaves 1-2
Cardamom (broken) 1/2 tsp
Salt (to taste) 1/2 tsp
Oil (for cooking) 2 tbsp
Fresh coriander (chopped) 1 sprig (for garnish)

Instructions:

1. Preparing the Cabbage Koftas:
To start, grate the cabbage finely and place it in a bowl. Using your hands, press the cabbage to remove any excess water. This step is crucial to prevent the koftas from being soggy. Once drained, add the gram flour, chopped green chili, chopped coriander, cumin powder, red chili powder, turmeric powder, garam masala, and salt. Mix everything well until a smooth dough-like consistency forms.
Shape this mixture into small round balls (koftas) and set them aside on a plate.

2. Frying the Koftas:
Heat oil in a deep frying pan over medium heat. Once the oil is hot, carefully drop the koftas into the oil one by one. Fry them in batches until they turn golden brown and crispy. This will take about 4-5 minutes per batch. Once fried, remove the koftas and place them on a paper towel to absorb any excess oil. Set them aside.

3. Preparing the Gravy:
In another pan, heat 2 tbsp of oil over medium heat. Add the bay leaves and ginger paste, cooking for about 10 seconds until the aroma is released. Next, add the gram flour and roast it for 20 seconds, stirring continuously to avoid burning.
Add the tomato puree and mix well. Let it cook for a minute before adding the coriander powder, red chili powder, turmeric powder, cumin powder, and garam masala powder. Cook the mixture for 4-5 minutes, allowing the spices to infuse into the gravy.

4. Adding the Yogurt and Cream:
Now, add the yogurt to the mixture and cook for another minute, stirring to combine. Follow this by adding the fresh cream and mixing it well. Let the gravy cook for 3 minutes.

5. Final Cooking:
After 3 minutes, add enough water to the gravy to achieve your desired consistency. Add salt to taste and let it come to a boil. Once the gravy is boiling, add the crushed cardamom and cook for an additional 5 minutes.

6. Adding the Koftas:
Gently add the fried cabbage koftas into the simmering gravy and cook for another minute to allow the koftas to soak up the flavors of the gravy.
Garnish with fresh chopped coriander.
