Ingredients:

Quantity Ingredient
2 2/3 all-purpose flour
2 baking powder
1/4 white sugar
4 eggs
2 1/2 cups milk
1/3 cup oil
1 teaspoon vanilla extract

Instructions:

  1. Preparation:

    • Combine the all-purpose flour, baking powder, and white sugar in a large bowl. You can do this the night before. If preparing in advance, cover the bowl and leave it on the counter.
    • In a separate small bowl, beat the eggs. Then, stir in the milk, oil, and vanilla extract (if using). This step can also be done the night before. If preparing ahead, cover the bowl and store it in the fridge.
  2. Mixing the Batter:

    • When you’re ready to cook, pour the liquid mixture into the flour mixture. Stir quickly with a fork until the ingredients are moistened, but the batter is still lumpy.
  3. Cooking:

    • Lightly grease a frying pan with a lid, such as an electric frying pan.
    • Pour about a quarter cup of batter onto the hot surface for each pancake.
    • Cover the pan and cook until the surface loses its wet look and bubbles have formed.
    • Flip the pancakes over and cook uncovered for an additional two to three minutes, or until the underside is browned.
  4. Keeping Warm:

    • Keep the cooked pancakes warm in a low oven while you finish cooking the remaining batter.
  5. Serving:

    • This recipe makes approximately 24 pancakes, serving four to six people with leftovers.
    • Serve the pancakes warm, with your choice of toppings. They’re best enjoyed with warmed real maple syrup, although blueberry syrup is also a delicious option.

Enjoy Your Good Morning Pancakes! 🌞🥞

These pancakes are sure to bring smiles to the faces of your loved ones, whether you’re serving them up for a leisurely weekend breakfast or a quick weekday supper. Indulge in the fluffy goodness and savor the delightful flavors with every bite!
