Easter Nutella® Tartlets

Ricotta cheese (cow’s milk) 250g
Fresh liquid cream 200g
Powdered sugar 50g
Fresh strawberries 50g
Lemon zest To taste

Nutella® 60g

Instructions

  1. Prepare the Cream
    Begin by making the creamy filling for your tartlets. In a mixing bowl, combine the ricotta cheese and fresh cream. Add the powdered sugar and beat the mixture with electric whisks for 2 to 3 minutes until smooth and well combined.

  2. Prepare the Strawberries
    Wash and clean the strawberries, then cut them into small pieces of approximately 1 cm in size. Stir the chopped strawberries into the ricotta cream mixture.

  3. Chill the Cream
    Cover the bowl with plastic wrap and refrigerate it while you proceed with the rest of the preparation.

  4. Prepare the Tartlet Bases
    To create the bases of the tartlets, use a rolling pin to flatten the slices of Colomba cake. Using a round cookie cutter, cut two 10 cm diameter discs from each slice. Arrange the four discs on a tray, leaving them in the cookie cutter molds for stability.

  5. Make the Crumble
    For the crumble topping, roughly chop the leftover Colomba cake scraps with a knife. Melt a small knob of butter in a pan and add the chopped Colomba to create a crunchy crumble. Set it aside for later.

  6. Assemble the Tartlets
    Transfer the ricotta-strawberry cream mixture into a piping bag. Take the tartlet bases and insert a smaller round cutter (about 3 cm in diameter) into the center of each disc. Fill the outer ring of the tartlet with the ricotta cream until it reaches about 3 cm in height. Use the back of a teaspoon to level the cream.

  7. Add the Crumble
    Sprinkle the crumble over the cream filling, then carefully remove the smaller cutter. Place the tartlets in the freezer to set for one hour, or in the fridge for about 2 hours.

  8. Finish the Tartlets
    Once the tartlets have firmed up, gently remove the larger cookie cutter. Fill the center of each tartlet with 15g of Nutella®. Finally, decorate with a thin slice of strawberry on top of each tartlet.

  9. Serve
