Instructions:

Step 1: Prepare the Choux Pastry

  1. In a saucepan, combine 167g of water, 45g of butter, and 50g of granulated sugar. Heat over medium heat until the butter has melted, and the mixture reaches a gentle boil.
  2. Once boiling, quickly add the 133g of all-purpose flour all at once. Stir vigorously with a wooden spoon until the mixture pulls away from the sides of the pan and forms a smooth dough. You’ll notice a white film forming on the bottom of the pan—this is a good sign!
