Prepare the Meringue:
- Start by filling a saucepan with about two inches of water and place a heatproof bowl (bastardella) on top, ensuring it doesn’t touch the water.
- Add the granulated sugar into the bowl. Turn the heat on low and gently bring the mixture to 60°C while stirring constantly with a whisk.
- As the sugar dissolves and the temperature is reached, remove the bowl from the heat and continue to whip the mixture with an electric mixer until the meringue has cooled down to room temperature and forms stiff peaks.

Shape the Pavlova Shells:
- Once the meringue has cooled, transfer it into a piping bag fitted with a 1 cm round tip.
- Line a baking tray with parchment paper and, using a cookie cutter or your own hand, draw 8 cm diameter circles on the paper to guide the shape.
- Pipe the meringue onto the parchment, following the drawn circles, and form small baskets by swirling the meringue higher at the edges to create a shell-like shape.

Bake the Meringues:
- Preheat the oven to 100°C (static mode). Place the tray in the middle of the oven and bake the meringue baskets for 1 hour.
- After baking, turn off the oven and leave the meringues inside for an additional 30 minutes to cool gradually, which helps them crisp up perfectly.

Assemble the Mini Pavlova:
- Once the meringue baskets have cooled completely, gently remove them from the parchment paper.
- Using a piping bag, fill each meringue shell with approximately 15g of Nutella®.
- Decorate with fresh mixed berries and a few sprigs of rosemary for an aromatic and visually appealing touch.
