Prepare the Dough
Start by placing the brown sugar into a mixing bowl. Add the cold unsalted butter, cut into cubes, and beat everything together using an electric mixer until smooth and well combined.
Next, crack the eggs into the bowl and continue mixing until incorporated. -
Combine Dry Ingredients
In a separate small bowl, whisk together the all-purpose flour and baking powder. Gradually add the dry mixture to the wet ingredients and mix until a soft dough forms. -
Add Oats
Stir in the oats by hand, ensuring they are evenly distributed throughout the dough. The dough should be slightly thick but still manageable for shaping. -
